Hummus, Beetroot and Micro Herb Bruschetta

Ingredients

  • Lemony hummus (quick hummus recipe)

  • 4 slices of Sourdough bread

  • 1 cup raw beetroot, grated

  • 1 cup carrots, grated

  • 1 cup mixed salad greens or micro herbs  

  • ½ medium Spanish onion (red), thinly sliced

  • Extra virgin olive oil to drizzle

  • Salt and cracked black pepper to taste

To assemble

  1. Toast the sourdough slices

  2. Spread generous quantity of hummus

  3. Top with salad greens, grated beetroot, carrot and onions

  4. Drizzle with extra virgin olive oil

  5. Season with salt and cracked black pepper
