Carrot and Ginger Soup

Ingredients
1 medium white onion, sliced
2 garlic cloves
4 carrots, peeled and diced
1-inch piece of chopped ginger
1/4 cup cream/coconut cream (optional)
2 tablespoons olive oil
Salt and pepper to taste
Method
Heat oil in a medium saucepan on a medium heat
Add onions, garlic, and ginger, and sauté for 5-7 minutes until onions are softened
Add the carrots and 2 cups of water
Cover the saucepan and cook till carrots are soft (approximately an additional 5-7 minutes)
Blend the soup with a stick/immersion blender
Season with salt and pepper to taste
Add the cream and stir in if you wish
