Carrot and Ginger Soup

Ingredients

  • 1 medium white onion, sliced

  • 2 garlic cloves

  • 4 carrots, peeled and diced

  • 1-inch piece of chopped ginger

  • 1/4 cup cream/coconut cream (optional)

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Method

  1. Heat oil in a medium saucepan on a medium heat

  2. Add onions, garlic, and ginger, and sauté for 5-7 minutes until onions are softened

  3. Add the carrots and 2 cups of water

  4. Cover the saucepan and cook till carrots are soft (approximately an additional 5-7 minutes)

  5. Blend the soup with a stick/immersion blender

  6. Season with salt and pepper to taste

  7. Add the cream and stir in if you wish
