Zucchini Basil and Parmesan Soup
This is so popular at my office that I often have to take a few more helpings for my colleagues! It’s quick to prepare with basic ingredients.

Ingredients
1 tbsp olive oil
1 medium brown onion, sliced
2-3 cloves of garlic, peeled and chopped
3 medium sized zucchini, sliced
1 vegetable stock cube
1 cup firmly packed basil leaves
1 1/2 cups of water
1/4 cup Parmesan cheese
1 tsp ground black pepper
Salt to taste
Method
In a medium saucepan, heat the oil and sauté the sliced onion till soft.
Add the garlic and sauté for a couple of minutes.
Add the sliced zucchini and sauté for 2 minutes.
Add the water ( it should just cover the zucchini slices).
Add the stock cubes and cook till the zucchini is soft. Turn off the heat.
Add basil and blend the soup with a stick blender.
Add Parmesan, pepper and salt.
Serve hot with crusty bread.
