Zucchini Basil and Parmesan Soup

This is so popular at my office that I often have to take a few more helpings for my colleagues! It’s quick to prepare with basic ingredients.

Ingredients

  • 1 tbsp olive oil

  • 1 medium brown onion, sliced

  • 2-3 cloves of garlic, peeled and chopped

  • 3 medium sized zucchini, sliced

  • 1 vegetable stock cube

  • 1 cup firmly packed basil leaves

  • 1 1/2 cups of water

  • 1/4 cup Parmesan cheese

  • 1 tsp ground black pepper

  • Salt to taste

Method

  1. In a medium saucepan, heat the oil and sauté the sliced onion till soft.

  2. Add the garlic and sauté for a couple of minutes.

  3. Add the sliced zucchini and sauté for 2 minutes.

  4. Add the water ( it should just cover the zucchini slices).

  5. Add the stock cubes and cook till the zucchini is soft. Turn off the heat.

  6. Add basil and blend the soup with a stick blender.

  7. Add Parmesan, pepper and salt.

  8. Serve hot with crusty bread.
