Spiralised Zucchini Pesto Burrata
A simple recipe packed with flavour. Cooking time is literally 2 minutes and with zucchini noodles available at most supermarkets (if you don’t have a spiraliser) this is an easy addition to your repertoire. I have used burrata but you can use any soft cheese of your choice to make this delicious dish.
This dish is best eaten as soon as it is made (you will find it hard to resist anyways).

Ingredients
2 medium sized zucchinis (or 1 packet of spiralised zucchini - 200g)
2 tsp olive oil
2 heaped tbsp pesto (pesto recipe)
1/4 cup sundried tomatoes
100 grams burrata (you can use any soft cheese like crumbed ricotta or crumbled paneer; you could even use grated parmesan)
basil leaves as garnish
Method
Spiralise the zucchinis into a bowl.
Note: most supermarkets sell ready to buy spiralised zucchini which makes this recipe even easier to make.
Heat the olive oil in a wide saucepan.
Add the spiralised zucchini noodles and sauté for 2 minutes till zucchini is slightly soft.
Mix in the pesto.
Season with salt and pepper (go easy on the salt as the pesto already contains salt).
Transfer the noodles to a serving dish.
Add the burrata (or other cheese of your choice), drizzle with olive oil and sprinkle with chili flakes.
Add sundried tomatoes and basil leaves as garnish.
Serve immediately.
