Cheats Aloo Paratha

Aloo literally means potato and parathas are Indian bread. Aloo Parathas are Indian bread stuffed with potatoes. This cheats version uses mountain bread in place of traditional rotis, filled with a yummy spiced potato stuffing. My family loves these and I find this version much easier to make, so we can have it more often! You can have these for breakfast, as they do in India, with curry for a hearty meal or just by itself for a simple lunch or dinner.

Ingredients

Filling

  • 3 medium white potatoes, boiled and mashed (should make approximately 2 cups when mashed)

  • 1/2 cup white onion, finely chopped

  • 1 teaspoon green chilli, finely chopped (optional depending on spice tolerance)

  • 1 teaspoon cumin seeds

  • 1 teaspoon red chilli powder

  • 1/4 teaspoon turmeric powder

  • 1 tablespoon lime juice

  • 2 tablespoons fresh coriander, chopped

  • 2 tablespoons olive oil

  • 1/2 teaspoon salt

Other ingredients

  • 2 sheets of mountain bread (can use other flat breads of your choice)

  • 2 tablespoons olive oil for cooking

Method

Filling

  1. Heat the oil in a medium pan on a medium heat

  2. Add cumin seeds. Once they splutter add the onions and sauté till the onions are soft (approximately 5 minutes)

  3. Add the green chilli (optional), chilli powder and turmeric powder. Mix well.

  4. Add the boiled potatoes, lime juice, coriander and salt.

  5. Turn off the heat and mix the ingredients so that the potatoes are coated with the spices

  6. Transfer to a bowl and keep warm for assembly/cooking

To assemble

  1. Cut each sheet of mountain bread in half

  2. Add half of the filling to one half of the mountain bread. Spread evenly and cover with the other half to make a sandwich

  3. Heat a medium sized pan on medium heat. Grease it with oil and gently place the filled bread onto the pan. Cook until the bottom is golden and slightly crisp (approximately 2-3 minutes)

  4. Brush oil onto the top side of the bread and flip it around to cook the other side until goldern and slightly crisp

  5. Cut the bread into thirds and serve warm

note: goes well with plain yogurt or as a side to any Indian curry
